You will need:
1 tbsp Olive Oil
1 Onion Chopped
2 tsp Mild Curry Powder
1 Celery Chopped
4 Small Parsnips Roughly Chopped
2 Pears Cored and Chopped
1 Litre Water
1 Vegetable Stock Cube
Salt and Pepper
1 Large Pan and Lid
To make this:
Heat the oil in a very large saucepan
Fry the onion for 5 minutes and then stir in the curry powder
Add the parsnips and celery
Place the lid on and sweat the veg for 5 minutes checking occasionally to ensure it is not sticking to the bottom
Add the pear, water and the stock cube
Bring to the boil and simmer for around 20 minutes
Blend and serve
